About our salmon

Yarra Valley Caviar is the only dedicated producer of fresh water Atlantic Salmon in Victoria.

The boutique aquaculture farm is a staunch believer in the humane treatment of its fish, and the long-term sustainability of the river, and refuses to use antibiotics, chemicals or hormones.

Its salmon are reared in the fresh waters of the Victorian Alps, living in long earthen ponds fed by waterfalls with plenty of room to move on the Rubicon River, resulting in a flesh which is lighter in colour and lower in fat.

The salmon flesh is available only when it’s at its peak (October to February) and so delivered literally from pond to plate within hours - making it the freshest on the market.
