Naturally reared - naturally served

Yarra Valley Caviar is one of the only fresh water aquaculture farms in the world to take a completely natural approach to rearing, and milking, its Atlantic Salmon - refusing to use any antibiotics or chemicals.

 It is also one of Australia’s only providers of hand-milked Atlantic Salmon caviar - meaning our fish and caviar are 100% natural and our fish are not unduely stressed through the traditional method of milking.

 Our salmon are carefully monitored to determine the best time to milk and are gently hand-milked under an entirely natural anaesthetic, then returned to the fresh, clean, clear water at the foot of the Victorian Alps on the Rubicon River.

Premier salmon - premier caviar

Raised in long earthen ponds which are fed by waterfalls creates a strong current in which the fish to swim, so they’re living in their own natural environment. We don't use antibiotics or chemicals.  The fish thrive in the cold, clean and clear water and are very active, therefore producing a leaner texture, superior body tone and significantly lower fat content.

With lots of room to move, and a healthy body, a higher proportion spawn providing eggs which are plump and flawless bursting with flavour.

Setting the industry benchmark

Following all of the UK soil association guidelines for organic aquaculture, Yarra Valley Caviar is on its way to becoming officially organic certified.  The quality of its award winning caviar is a direct reflection of the natural fresh environment in which the Atlantic Salmon live and the humane way they are treated.
