Yarra Valley Salmon is one of the only fresh water aquaculture farms in the world to take a completely natural approach to rearing, and milking, its Atlantic Salmon - refusing to use any antibiotics or chemicals.

It is also Australia’s only provider of hand-milked Atlantic Salmon caviar - meaning its fish, and caviar, is not only 100% natural, but the fish are not put under any undue stress through traditional methods of milking.

The salmon are instead carefully monitored to determine the best time to milk, and are gently hand-milked under an entirely natural anaesthetic, then returned to the fresh, clean, clear water at the foot of the Victorian Alps on the Rubicon River which they call home.

Raised in long earthen ponds which are fed by waterfalls creates a strong current for the fish to swim, so they’re living in their own natural environment, and with no antibiotics or chemicals, the fish can thrive in the cold, clean and clear waters and are very active, therefore producing a leaner texture, superior body tone and significantly lower fat content. 

 

With lots of room to move, and a healthy body, a higher proportion spawn, providing eggs which are plump and flawless bursting with flavour.

Setting industry benchmarks

Following all of the UK soil association guidelines for organic aquaculture, Yarra Valley Salmon is on its way to becoming officially organic certified.  The quality of its award winning caviar is a direct reflection of the natural, fresh environment in which the Atlantic Salmon live, and the humane way they are treated.
