Yarra Valley Caviar is a boutique fresh water aquaculture farm at the base of the Rubicon River in rural Victoria, which takes a completely natural approach to rearing, and milking, its Atlantic Salmon.
It is the only dedicated producer of fresh water Atlantic Salmon in Victoria and a staunch believer in the humane treatment of its fish; which are raised in long earthen ponds at the foot of the Victorian Alps fed by waterfalls, so they’re living in their own natural environment, with plenty of room to move.
The salmon are milked for caviar entirely by hand once a year under a completely natural anaesthetic of clove oil, and are then gently placed backed in their ponds to spawn again the following year.
Following strict UK soil association guidelines for organic aquaculture, the farm refuses to use antibiotics or chemicals and its caviar is cleaned and packaged on site, without any additives.
The result is product which is bright, plump, flawless - and pops on the palate bursting with flavour.
Yarra Valley Caviar also has fresh and smoked salmon and has recently released a line of rainbow trout, reared in the same natural way as its Atlantic Salmon.
